Cocoon By Naomi
Lunchbox Treats To Fuel Postpartum
Naomi is a post-natal doula who helps her clients during the critical but often overlooked postpartum period, assisting with rest, rejuvenation, and transitioning into motherhood.
This recipe is taken from Naomi's E-Cookbook 'Cocoon: Food to Fuel Postpartum'; a bible for postpartum food, based on the principles of traditional postpartum nourishment: warm, warming, soupy, stewy, easily digestible, and nutrient-dense.
INGREDIENTS
90g raw sugar
140g wholegrain spelt flour
30g cacao powder
1 tsp bicarbonate of soda
.5 tsp baking powder
.5 tsp cinnamon
1 large or two small zucchinis, grated
2 eggs, beaten
100g olive oil
METHOD
1. Preheat the oven to 180 degrees C. Line a loaf tin with baking paper (the easiest way is to scrunch your baking paper up, then line, so you can get it to sit into the tin).
2. Mix your dry ingredients together in a bowl. Create a well in the middle, then add your grated zucchini, eggs and olive oil.
3. Mix all the ingredients together until combined, then pour into your loaf tin and bake for 20 minutes, or until your knife comes up clean.
